About the bar

The latest addition to Pump Street’s festive Bakery Series is this 60% dark milk bar with flakes of cinnamon bun. Embedded in pastry from their own bakery in Suffolk, this deliciously moreish bar balances the texture of the buttery pastry flakes with notes of warm spices and zesty orange.

About the maker

After a long and successful career at IBM, international jet-setter Chris Brennan briefly retired before deciding to pioneer the making of sourdough and other breads in his idyllic countryside bakery in Orford, Suffolk. About a decade later, he and his daughter Joanna decided to delve into crafting award-winning chocolate in their eponymous bakery situated on Pump Street, and have won numerous awards for both their chocolates and their innovative packaging.

The beans

The cocoa for this bar was sourced from Produits des Iles SA (PISA), a central fermentery established in northern Haiti in 2012. PISA works with 1,104 small-scale farmers – 492 of whom are women – to pay premium prices for the unprocessed cocoa harvest and then processing it centrally, allowing farmers to earn more money for their quality beans.
