About the bar

This bar from Ara Chocolat combines a fruity 70% dark chocolate with Agen plums, sourced from Lot-et-Garonne, a region renowned as the plum capital of France. This variety of Agen plums are known as Prune d’Ente, famous for their sweet, large, and thin-skinned fruit. We found that the sweetness of the plums pairs beautifully with the notes of dried fruit and citrus of the dark chocolate.

About the maker

Ara Chocolat is a Parisian bean-to-bar chocolate maker founded by Venezuelan couple, Andrés and Sabrina. Andrés, the head maker, worked at multiple Michelin-starred restaurants and 5-star hotels in London before turning his skills to the art of chocolate making. They now run their business with sustainability in mind – using biodegradable packaging, renewable energy, trading directly with farmers, making products 100% vegan. It’s all at the heart of what they do.

The beans

The beans for this bar are sourced from Hacienda La Catarina, in the Tecapa Chinameca region of El Salvador. The beans are fermented for 7 days, before being dried for 17 days on drying beds. Click here to read more about the farm from Belco.
