A sweet dark bar full of fruit. Honey is mixed with blueberries and strawberries giving the bar a summery flavour. Richer, deeper flavours develop, hinting at dark fruits and burnt molasses. Thanks to the addition of a little of Askionsie’s own cocoa butter, the bar has a thick creamy texture that melts perfectly on the tongue.
ABOUT THE MAKER
Chocolate maker Shawn Askinosie spent 20 years as a criminal defence lawyer before switching his attention to chocolate in 2005. He travelled across four continents to build relationships with farmers and figure out how they could work together to create the perfect chocolate. Now, he and his team place great emphasis on social responsibility: putting fairness, justice, sustainability, and education at the heart of everything they do.
The Mababu Central Cocoa Fermentery (CCF) lies in the tiny village of Mababu, between the slopes of the Livingstone Mountains and the shores of Lake Malawi. The CCF is run by Mama Mpoki and serves a small group of around 60 cocoa-growing families, collectively fermenting and drying their beans to allow the region’s unique flavour profile to shine through in every bar.
