An intriguing Ecuadorian dark. We detected none of the earthy or vegetal notes we have come to expect of this origin. The smooth chocolate has a delicate, almost aromatic note that hints of fior di latte and vanilla.
A sweet and gentle spice permeates the bar and gives a flavour strangely reminiscent of cinnamon milk. The intriguing tasting notes are given an indulgent quality by the smooth and creamy chocolate. Thanks to the unique but delicious flavours, we found ourselves going back for more again and again.
The silken bar is classically French. The well-tempered bar has the smooth texture we’ve come to expect from cocoa-butter rich French chocolate. Chapon’s thin mould works perfectly with the buttery consistency.
Patrice Chapon is the pâtissier-chocolatier behind artisan maker Chocolat Chapon.
After completing a degree in patisserie, chocolate and ice cream and working in restaurants in France, Patrice moved across the channel. Here he joined La Maison Du Sorbet, who supply ice creams and sorbets to Buckingham Palace. He became fascinated by chocolate during his stay in England, and has said he took trips to Harrods daily to visit the chocolate hall.
Crafting great chocolate from the bean doesn’t happen overnight. Patrice had to research, find the right equipment and even make his own machines, specially adapted to his requirements, and since 2010 he has been on a mission to create great bean to bar chocolate.
