About the maker

Duffy Sheardown is an early supporter and promoter of the ‘Direct Trade’ movement, which goes well beyond Fairtrade standards. Duffy follows a ‘Direct Cacao’ model, in which chocolate makers agree to pay whatever price the farmer asks for her cocoa beans – without complaining. This premium paid for the beans encourages the farmer to take more care of her crop, from fermenting the beans well to drying them properly. Working like this also encourages farmers to grow ‘fine-flavour’ as opposed to ‘bulk’ beans – the vision behind ‘Direct Cacao’ in changing the future for cocoa farmers and fine chocolate.

The beans

This bar is made from fine organic “Hispaniola” cocoa beans. The cane sugar and cocoa butter are also completely organic, with the latter coming from the Dominican Republic. When Duffy’s makes this chocolate, the team say it makes the whole factory smell of pineapple.
