This 72% dark bar from Fossa is silky smooth in the mouth. We picked up on notes of coffee, walnuts, and prunes, with a touch of blueberry at the end of the flavour wave.

About the maker

The fossa is a cat-like mammal indigenous to Madagascar, just like the craft chocolate Yilina and Jay tasted years ago that first started their chocolate journey. Yilina and Jay’s first taste of craft chocolate was a Madagascan dark bar, and they were instantly hit by wonderful flavours of refreshingly tart raspberries and warm almonds. This moment opened the pair’s eyes to how craft chocolate can have such flavour clarity – so different from the normal mass-produced industrial chocolate they grew up with.

The beans

Triang town located across the Titiwangsa mountains in Malaysia is relatively rural and is surrounded by lush, green forests. Here, grafted cacao trees of selected varietals are systematically cultivated on gentle slopes at an altitude of 330m above sea level. The fruit pods are broken using automation and fermentation takes place for five to six days during which beans are turned twice. After fermentation, the beans go through a pressure jet wash before drying.  The reward for these exacting methods is beans with low acidity and an intoxicating aroma.
