  • About the bar

    This limited-edition, special release Foundry bar is not one to miss. This 70% dark whisky-infused bar pairs together fruity Ugandan beans from the Latitude Trade Co. with a single malt whisky from Thomson Whisky. The infusion provides a comforting wood spice as well as creamy hints of dark dried fruits.

    Thomson Whisky are based in Riverhead, Auckland and release only a limited number of hand-selected whiskies every year. For this bar, Foundry have chosen a whisky from Mat Thomson’s extensive barrel room, aged in an ex-bourbon barrel American Oak and made from 100% New Zealand grown malted barley. This whisky is naturally sweet with notes of licorice and sweet woodiness.

    About the maker

    David and his wife Janelle are the chocolate magicians behind Foundry Chocolate, New Zealand’s newest craft chocolate maker. And just like the world’s finest single malt distilleries and craft vineyards, the Mahurangi-based chocolate makers are dedicated to capturing the unique character of origin. The husband and wife team have both applied their ‘craft’ in their own unique way – David has not only accentuated the ingredients’ provenance and terroir, he’s tinkered with time, temperature and even the chocolate making machinery to ensure each micro-batch is unforgettable. Janelle has put her knowledge of art-direction and design into packaging, so when their bars are unwrapped, feels like an event in itself.

    The beans

    The beans in this bar were sourced from Semuliki Forest Cacao, a grower-centred fermentery that works with over one thousand small-scale organic cocoa farmers. It lies in Bundibugyo, a district of western Uganda that borders the Semuliki National Park. Renowned for its cocoa production, the district also neighbours the Rwenzori Mountains, a diverse ecosystem that is legendary for holding the source of the Nile River.
