Tom and Monica have carefully combined their new Zorzal cocoa beans with High Lawn Farm’s award-winning “Berkshire Fresh” butter for a match made in heaven. The sweet, toasty notes of the brown butter pair perfectly with the cinnamon raisin flavours of the Dominican beans and an exceptionally creamy melt.
ABOUT THE MAKER
Tom and Monica were living in Los Angeles as a TV producer and real estate agent when they discovered the magic of craft chocolate. In their own words: “We first discovered craft chocolate in, of all places, a vintage furniture shop in Los Angeles. The incredible flavors we tasted in those bars completely changed how we thought about chocolate, and started us on our journey to become single origin chocolate makers”.
The beans in this bar were sourced from Zorzal Cacao, near San Francisco de Macoris in northern Dominican Republic. This 1000-acre reserve was initially created as a nature reserve in 2012, but the founder Charles Kerchner quickly saw an opportunity to help local cocoa farmers and raise vital funds for the trust. Now the reserve has almost 200 acres of sustainable agroforestry, and provides a vital service to the local communities through employment and education.
