About the bar
This fine and creamy 50% dark milk bar is produced with Forastero and Trinitario beans from the Congo. With an upfront cocoa butter taste, the bar carries prominent notes of caramel and cream.
About the maker
Based in Belgium, Julia ‘Mike’ Mikerova and Björn ‘Becky’ Becker are the owners of Brussels’ first organic Bean-to-Bar chocolate workshop, and pride themselves on real, honest chocolate. Importing fine cacao beans directly from 5 plantations around the world, sustainability is not just a word to them. In addition to paying a fair price which is far about the market price and avoiding plantations which use child labour, Mike & Becky also only use organic beetroot sugar, which is incorporated into their bars at their 100% green powered production facility.
The beans
Located in the Ituri province in northeast Congo, these beans are grown alongside other crops under the canopy of shade trees. The cacao farms form a forest belt protecting the Okapi Wildlife Reserve, home of the largest population of okapis in the world – endangered forest giraffes known for their typical striped behind. The beans are centrally fermented in Mungamba, giving local farmers the chance to access the international market of specialty cacao, and have a soft, chocolatey flavour with notes of cookie, vanilla and dried flowers.

Greeted with opening notes of Mixed Fruit / Peel. This is a very smooth and chocolatey bar which is fairly slow to melt. An indulgently thick mouthfeel of unsweetened whipped cream, with notes of honey sweetness the final dark chocolate flavours cut through providing balance. Slightly drying with occasional Burnt note at the close.
