This dark 70% bar from Pure Imagination is fruity & floral. We picked up on initial tasting notes of tangerine & grapefruit, followed by sweet dates and finishing on a honeysuckle note.

About the maker

Founded in 2007 by Janice Wong, Pure Imagination is Singapore’s first single-origin chocolate company – a milestone not just for Janice, but for Singapore’s growing place in the world of craft chocolate. For their single-origin chocolates, Janice works with Mario Vandeneede, the founder of Chocolatoa, who creates the recipes and crafts the chocolate bars. Mario’s mission is to create pure, origin-based chocolate that celebrates the unique terroir of each bean while building direct, fair relationships with farmers; using only cacao and a small amount of sugar to highlight the bean’s natural flavours.

The beans

The beans from this bar are grown by the Qori Inti cooperative in the upper basin of the Apurímac River, in the region of Vraem, Cusco, Peru. The Vraem region consists of vast, beautiful ecological landscapes ranging from 400 m to 3000m, with booming diversity in its forest flora and fauna. In addition to its natural beauty, the Vraem region is also unfortunately known for conflicts and illegal activities. In 2017, the cocoa farmers in the area decided to pursue a legal income through cacao production. This single variety cacao, selected from promising native genetics, was started by one family and is now being reproduced for other member growers.
