This box of Neapolitans are absolutely perfect for a dinner party. These little 72% dark chocolate bits by Ruket from Kokoa Kamili, Tanzania have an intensely fruity layers end with a sharp citrus finish.

About the maker

Ruket founders Alessandro and Marco have always loved food and been fascinated by traditional, artisanal production. Their discovery of craft chocolate happened almost by accident, when Marco wanted to use the best possible chocolate in his ice cream parlour, the pair started experimenting with cacao. The two quickly decided that this chocolate was much more than just an ingredient and that they wanted to share it with the world.

Working with a select few origins, Marco and Alessandro are keen to spread the word and let people discover for themselves the art and flavours of bean-to-bar chocolate.

The beans

For this bar Ruket have used beans from the Kokoa Kamili cooperative found in the Kilombero Valley located in the south-western region of Tanzania. The valley is located in a vast floodplain, nestled between the Kilombero River in the south-east and the Udzungwa-Mountains in the north-west.

The cooperative works closely with farmers in a truly collaborative process; the farmers harvest the cocoa beans while the cooperative overseas the fermentation and drying stages.

The beans for this bar underwent a slow roast for 20 minutes at 120 degrees which has imparted a beautifully subtle roasted note to the bar. Intensely fruity layers end with a sharp citrus finish making this a bar with well balanced acidity.
