ABOUT THE MAKER
Sirene is a Canadian small-batch craft chocolate maker, crafting its chocolate in Victoria, British Columbia. Taylor Kennedy founded Sirene in 2013 after 18 years at the National Geographic Society, having become obsessed with the particular and painstaking process required to make great chocolate. Sirene looks at many factors when considering a new cocoa farmer, and considers its relationship with suppliers as one of equals, working together to deliver the best chocolate possible.
ABOUT THE BEANS
The beans for this bar were sourced from Kokoa Kamili in the Kilombero Valley, Tanzania. Kokoa Kamili has been paying premium prices for wet cocoa since 2015, saving farmers the tasks of fermentation and drying and adding enormous value to their cocoa beans. In the height of harvest season, Kokoa Kamili employs 50 people from their village, and has set up a scholarship fund for local girls to go to the nearby secondary school.

As you might expect from Kokoa Kamili beans, this bar is bursting with fruity notes, particularly stone fruits. For a 100% bar, it’s extraordinarily mellow.

What do other people who've discovered Sirene - Kokoa Kamili, Tanzania 100% have to say?
I get the 100% cocoa subscription and in this box there were two from Kokoa Kamili in Tanzania. To me these 2 bars were completely different, which is interesting. (The other bar was Raaka’s). This bar by Sirene was my favourite. It has acidity, but for me much better integrated so it feels less like an assault and I get more red fruits (cherry!) There is a slight roughness to the texture as it melts, but not unpleasant. Really enjoyed this bar. I’m not sure what makes such a difference in the flavours, maybe Sirene roast the beans while Raaka don’t appear to do this.
