Wondrously fruity, this chocolate has a hint of texture to remind you of the stone metates used for thousands of years to grind the nibs into chocolate.

About the maker

Sirene is a Canadian small-batch craft chocolate maker, crafting its chocolate in Victoria, British Columbia. Taylor Kennedy founded Sirene in 2013 after 18 years at the National Geographic Society, having become obsessed with the particular and painstaking process required to make great chocolate. Sirene looks at many factors when considering a new cocoa farmer, and considers its relationship with suppliers as one of equals, working together to deliver the best chocolate possible.

The beans

This bar is made with cacao from the Rayen cooperative, a recent network of cacao growers in the southwest of Mexico’s Chiapas region: Soconusco. Archaeological evidence shows over 4,000 years of uninterrupted usage of cacao in this region. Rayen cooperative focus on quality and continuing the reputation of Soconusco as a region for growing fine flavour cacao. It partners with international chocolate makers and Mexican chocolatiers to boost their production and find new, direct buyers while conserving biodiversity in the cacao forests of Soconusco.
