This joyful-tasting bar is the definition of award-winning chocolate. Its initial caramel flavour evolves in the mouth, ending on fruity notes. Winner of 3 Gold medals at the 2017 International Chocolate Awards, Silver medal in the 2017 Academy of Chocolate Awards, Bronze medal at the 2018 International Chocolate Awards.
ABOUT THE MAKER
Sirene is a Canadian small-batch craft chocolate maker, crafting its chocolate in Victoria, British Columbia. Taylor Kennedy founded Sirene in 2013 after 18 years at the National Geographic Society, having become obsessed with the particular and painstaking process required to make great chocolate. Sirene looks at many factors when considering a new cocoa farmer, and considers its relationship with suppliers as one of equals, working together to deliver the best chocolate possible.
ABOUT THE BEANS
The beans for this bar were sourced from the depths of the Amazonian jungle in Peru. More specifically, these fantastic beans are grown by Ucayali River Cacao, a central fermentary which works with local cacao farmers living on the Ucayali River outside of the Peruvian city of Pucallpa. The region has historically been afflicted by civil unrest, from narco-trafficking to the presence of the Shining Path militant group. The presence of Ucayali River Cacao enables local farmers access to an alternative market to cocaine production, paying a premium price for wet cacao.
