About the maker

Based in Montreal, Canada, Allo Simonne was co-founded by Quentin Ryckaert and Vincent Coja in 2018. Quentin trained in hotel management in Belgium before specialising in chocolaterie and pâtisserie. Inspired by a lifelong passion for chocolate and experience, Quentin previously trained with renowned chocolatier Frédéric Blondeel, while Vincent was looking to transition from a career in construction into something more meaningful. They co-founded Allo Simonne after their homemade chocolate spreads won international awards. The company has since grown to a team of 10, with Fernando Galvan Rubio joining in 2023 to develop its bean-to-bar chocolate range. Allo Simonne’s mission is to create responsible, high-quality chocolate that combines exceptional taste with ethical sourcing and respect for everyone involved in its production.
