A delicate fruity & tropical dark chocolate bar from Ara Chocolat, with a beautiful melt. We picked up on notes of ripe stone fruits, light berry notes, and deeper flavours of dried apricot, reminding us of a raspberry and peach sorbet.

About the maker

Ara Chocolat is a Parisian bean-to-bar chocolate maker founded by Venezuelan couple, Andrés and Sabrina. Andrés, the head maker, worked at multiple Michelin-starred restaurants and 5-star hotels in London before turning his skills to the art of chocolate making. They now run their business with sustainability in mind – using biodegradable packaging, renewable energy, trading directly with farmers, making products 100% vegan. It’s all at the heart of what they do.

The beans

Sourced from the Cooperativa Cacahuatl, in the La Paz region of El Salvador, the beans used to make this bar are a mixture of Criollo and Trinitario varieties. The town of San Pedro Nonualco, where the beans are sourced from, lies inbetween high plateaus, near lake Ilopango. Now led by Roberto Reyes, Cooperativa Cacahuatl was initially formed by 16 producers who decided to make a union to develop their cacao products further, rather than struggle individually.
