This dark 72% chocolate bar from Ara Chocolat is rich and well-rounded. When we put this bar on our tongues, we immediately tasted notes of rich chocolate brownie and earthy notes of red wine, with some dried fruits at the end.

About the maker

Ara Chocolat is a Parisian bean-to-bar chocolate maker founded by Venezuelan couple, Andrés and Sabrina. Andrés, the head maker, worked at multiple Michelin-starred restaurants and 5-star hotels in London before turning his skills to the art of chocolate making. They now run their business with sustainability in mind – using biodegradable packaging, renewable energy, trading directly with farmers, making products 100% vegan. It’s all at the heart of what they do.

The beans

The beans for this bar are sourced from Las Violetas Jayaque in El Salvador. During it’s earlier years, the farm was made as a retreat to enjoy nature and grow cacao – but in 2017, Dr. Vidal met engineer Moisés Torres, and together with the NGO Alianza Cacao, they transformed the old coffee plantation into a cacao farm with Criollo varieties growing alongside the forest.
