This 70% dark chocolate bar from Ara Chocolat is the definition of a chocolate with a great flavour wave. The olives are more subtle than you expect, with gentle, almost floral olive notes that pair beautifully with the light, fruity and floral dark chocolate. We think this is an extremely interesting bar, and certainly one worth trying.

About the maker

Ara Chocolat is a Parisian bean-to-bar chocolate maker founded by Venezuelan couple, Andrés and Sabrina. Andrés, the head maker, worked at multiple Michelin-starred restaurants and 5-star hotels in London before turning his skills to the art of chocolate making. They now run their business with sustainability in mind – using biodegradable packaging, renewable energy, trading directly with farmers, making products 100% vegan. It’s all at the heart of what they do.

The beans

The beans for this bar are sourced from Hacienda La Catarina, in the Tecapa Chinameca region of El Salvador. The beans are fermented for 7 days, before being dried for 17 days on drying beds. Click here to read more about the farm from Belco.
