Cocoa pulp

Cocoa pulp is found within cocoa pods; essentially it’s just the flesh of the cacao fruit. But it’s from this slimy mucilage that much of chocolate’s flavour ultimately derives.

The seeds of the cacao fruit are naturally quite bitter and astringent; far removed from the sweet and complex flavours we associate with chocolate, but through the magic of fermentation, microorganisms transform the chemical composition and flavour of pulp and seeds into something we understand as ‘cocoa’.

It’s the naturally occurring sugars in cocoa pulp which ultimately power this transformation, and part of what makes cocoa pulp wonderfully tasty in its own right.
