This award-winning dark milk bar from Castronovo is made from a mix of cultivated and wild-growing cocoa beans. It enjoys a fruity profile with notes of caramel, nuts, and apricot.
ABOUT THE MAKER
Massachusetts-born Denise Castronovo is the leading lady behind Castronovo chocolate. Denise studied Environmental Studies at college, attained a Masters in Economics, and started her PhD in Ecology at the University of Georgia before becoming a professor in the field of mapping technology and spatial analysis. Boston’s harsh winters pushed Denise and her husband to move to Florida, where she first got involved in the craft chocolate movement.
The beans in this bar grow upon the remote slopes of Colombia’s coastal Sierra Nevada mountains. With no roads at these high altitudes, the wild beans have to be harvested by the indigenous Arhuaco people and carried down the hillsides on the backs of mules.
