ABOUT THE BAR
With alternating pieces of popped quinoa and spicy ginger, every bite of this bar is a surprise. The bright citrus notes in this bar pairs well with the puffy texture of the quinoa and heat from the ginger, and rounds off with the perfect level of astringency.
ABOUT THE MAKER
Dutch founders Rodney and Enver began to create bean-to-bar chocolate in Amsterdam in 2011. They are as passionate about ethics and sustainability as they are about the chocolate itself; they use only Organic ingredients, pay 50% above the Fairtrade price, and aim to become carbon neutral in their chocolate production. One aspect of this comes from their factory in Amsterdam’s harbour, which has such a large solar panel-covered roof that they generate more power than they consume.
ABOUT THE BEANS
The beans for this bar are grown by the Awajun, alongside the banks of the Cenepa and Rio Santiago rivers in the Amazon Rainforest. The Awajun are members of the NorAndino cooperative, an organisation with around 1800 cocoa farmers distributed throughout northern Peru.
