    This is a truly unique 100% bar from Chocolate Tree with no added sugar – just the natural sweetness of the cacao! To make this bar, Chocolate Tree have used cacao fruit juice in the fermentation process. The process includes a little extra cacao juice, which is gently reduced and added back in to draw out the sweetness of the cacao.

    About the maker

    Founders of Chocolate Tree, Alastair and Friederike Gower, started their chocolate adventure in 2005 by touring music festivals and selling their chocolates from a hand built solar powered geodesic dome tent. However, working with organic couvertures wasn’t enough for them. Alastair and Friederike – being the adventurous types – decided to start making their own chocolate from bean to bar in 2012. This was a time when the craft chocolate movement was just getting started in the UK. Chocolate Tree also run its chocolaterie in Edinburgh, which offers a comfortable, relaxing environment for customers to enjoy a chocolate-rich menu. Alastair and Friederike, alongside serving their bean to bar chocolates and bonbons, serve up ice cream, drinking chocolate, cakes, to name a few. They also guide chocolate tastings, to introduce and share the world of craft, bean to bar chocolate.

    The beans

    The beans for this bar began their journey in the north of Guatemala, in the tropical rainforests located in the natural park that surrounds the pristine paradise of the cenote lake Lachuá. This is a bountiful region, also producing harvests of fragrant cardamom and coffee. When it comes to the cacao, there is a particularly rich range of varietals, with trinitario, amelonado, forastero and some nacional beans selected for this bar. The Q’eqchi’ Maya families that live in the region cultivate cacao beans in a rigorous Transparent Trading model, which secures prices for the cacao for producers that are even higher than Fair Trade, whilst ensuring responsibility and accountability at every stage of production.
