TASTING NOTES
The natural flavours of sweet berries and hazelnuts in these Mexican beans are balanced beautifully by the light touch of spring salt for a truly decadent tasting experience.
ABOUT THE MAKER
The idea for Cuna de Piedra began on March 14th, 2019, when Enrique Perez (a food processing engineer and consultant) and Vicky Gonzalez (designer and brand strategist) spoke on the phone about a dream they shared. They dreamed of making a meaningful product, a product that would raise Mexico’s international reputation as a country of bountiful natural resources and high-quality workmanship. And that is what they have achieved, crafting proudly 100% Mexican bars and sourcing their beans direct from farmers and cooperatives around Mexico.
THE BEANS
The beans in this bar are sourced from Malaquias and Carlos, who together run the growing and processing of several hundred cocoa trees on their 2-hectare estate in Comalcalco, Tabasco. The beans are harvested, fermented, dried, cleaned, and packed at origin by the farmers and their families, keeping as much of the added value as possible within the farm itself.
The salt has been sourced with the help of Slow Food Mexico, whose 2018 initiative aims to protect and preserve the historical, cultural, and economic value of the Zapotitlán Salinas salt mines. The community here has passed down the tradition of making salt for more than two thousand years, but economic hardship is now forcing more and more of the younger generation to find work in the cities.
