TASTING NOTES
With this bar, enjoy the the flavours of toasted tea cake and malt. It is an intensely raisin and sultana-laden flavour, with an ultra creamy and smooth melt. This 68% is an outstanding example of Indian cacao.
ABOUT THE MAKER
Fjak crafts its small-batch chocolate in the depths of Hardangerfjord in Norway. Agur and Siv started making chocolate in 2015, but it was only in 2017 – after much experimenting and fine-tuning their processes – that they launched to immediate success. They’ve swept the board since then, picking up awards galore with their unique Nordic-inspired flavour combinations and exquisite single-origin dark and milk bars.
THE BEANS
Known as the spice garden of Kerala, the Idukki region of southern India has long had the climate and ecology to grow cocoa. But it wasn’t until 2016, when GoGround started investing in post-harvest processing facilities and farmer education, that fine-flavour cocoa farming really took off. Now husband-and-wife Luca and Ellen, with the support of the Italian RIVA foundation, have built relationships with the smallholder farmers of Udumbannoor, paying them guaranteed weekly payments in exchange for freshly harvested cocoa beans.

10/10. Description is spot on! Tastes exactly like a toasted tea cake with flavours of dried fruit and malt. You can discriminate the different dried fruits- I got sultana and raisin. Evokes baking a Bara Brith. When paired with coffee(multiple different beans) I found this bar lost it's teacake flavour and became more like the description on the bar viz. fruity. Paired with either Castronovo Tumaco dark milk 60% or Sirene 65% dark milk, the teacake flavours became even more distinct and intense. Really good resealable packaging as well.

I love this. I bought it entirely on spec from the Canopy Market stall, and it's not disappointed at all. It is indeed very raisin-y, but much nicer than raisins which I don't like. I am going to have to buy more because I'm eating it faster than I should and it's too nice not to have some always about me for emergency sustenance.
