This 70% dark chocolate bar from Fjak is rich and astringent. We tasted savoury tasting notes of soy sauce, almonds, and tart green apples.

About the maker

Fjak crafts its small-batch chocolate in the depths of Hardangerfjord in Norway. Agur and Siv started making chocolate in 2015, but it was only in 2017 – after much experimenting and fine-tuning their processes – that they launched to immediate success. They’ve swept the board since then, picking up awards galore with their unique Nordic-inspired flavour combinations and exquisite single-origin dark and milk bars.

The beans

The beans for this bar were sourced from the Tumaco region of Colombia, through Cacao Hunters. The Tumaco region has a vibrant mix of local cacao genetics, where producer associations are actively working to understand and propagate the unique genetics found throughout the forests around their communities. The beans used in this bar originate from four associations: Afromuvaras, Asprocat, Cortepaz and Corpoteva.
