This classic 72% dark bar from the Dominican Republic is divine – the bar is very chocolatey with notes of raisin and jam, and has a good length.

About the maker

MOKA’s journey started in 2007, when co-founders Jeff and Ishan were working on humanitarian community development at the Himalayan Institute in Cameroon, they noticed the centrality of cacao and agriculture to the country. Cameroon is the 4th largest exporter of cacao in the world. They also noticed the cracks in the industry, there was a lack of investment, farmers weren’t being fairly paid and the cacao being produced was low quality –  each factor playing into each other in this broken system. Witnessing the negative impact the chocolate industry was having on so many lives, Jeff and Ishan set out to change this.

The beans

The Zorzal cacao beans are farmed and processed by Reserva Zorzal and their neighbouring farms. Reserva Zorzal is in fact a large bird sanctuary – protecting the wildlife habitat for the Bicknell’s Thrush – in the Duarte province of the Dominican Republic. Its mission is to work to reforest endangered lands, protecting the birds as well as cultivating cacao and macadamia nuts. Burrowed within the bird sanctuary is Zorzal Cacao, a 130-acre fermentary and organic cocoa farm.
