You wouldn’t believe that this bar from Rosa Canina is 100% cacao! This is a delicate light bar, with smooth floral and stone fruit notes and almost no astringency. On the finish, we detect some more classic chocolatey notes, and we think that this would be a great bar for those looking to get into 100% chocolate due to its roundedness.

About the maker

Rosa Canina was originally founded as an organic ice cream company in 2008 in Berlin, Germany. The shop was opened by Reimar Philipps, who was then joined by Moritz Weber in 2014, and the two of them have run it together ever since. In 2020, they expanded to work more directly with cacao, where they brought in Zoe as Head Chocolate Maker. Today, they are a small team focusing on both ice cream and chocolate. Rosa Canina’s goal is simple: to make chocolate that tastes exceptional. Their curiosity to discover why this is the case has led them to traceable origins, honest sourcing, and producers who take cacao as seriously as they take chocolate. Not only is their cacao traceable, but their sugar too, prioritising honesty in sourcing.

The beans

The beans in this bar were sourced from Semuliki Forest Cacao, a grower-centred fermentery that works with over one thousand small-scale organic cocoa farmers. It lies in Bundibugyo, a district of western Uganda that borders the Semuliki National Park. Renowned for its cocoa production, the district also neighbours the Rwenzori Mountains, a diverse ecosystem that is legendary for holding the source of the Nile River.
