TASTING NOTES
This bar from Peruvian maker Shattell is a nicely intense 85% dark, with some juicy acidity against a backdrop of hazelnuts.
ABOUT THE MAKER
Shattell is a Peruvian craft chocolate maker founded in 2009 by visionary entrepreneur and expert chocolatier, Lisi Montoya. Lisi launched Shattell with the vision of making supreme-quality chocolate using the finest native cocoa beans. Her proximity to the cocoa farms allow her to partner directly with local farmers, facilitating training in sustainable agroforestry and securing higher prices for the farmers. The beans are then transported to the factory in Lima, where a team of female chocolate makers work their magic to create their multi-award-winning bars.
THE BEANS
The beans for this bar come from the Cusco Valley in the Peruvian Andes, a stone’s throw from the ancient mountain-top city of Machu Picchu. Cusco Valley is home to the Chuncho bean, one of Peru’s rarest varieties of cocoa.

Sophisticatedly fruity – expensive but worth it for a special treat or as a gift.
