  • About the bar

    This limited edition dark milk chocolate bar by Sirene has bits of caramelised pataxte in it. Pataxte is a cousin of the cocoa bean – it grows in the same environment, looks a bit like a cocoa pod, but has a completely different flavour. The pataxte in this bar has a light and floral flavour, with a slight crunch that pair well with the deep rich chocolate-y notes.

    About the maker

    Sirene is a Canadian small-batch craft chocolate maker, crafting its chocolate in Victoria, British Columbia. Taylor Kennedy founded Sirene in 2013 after 18 years at the National Geographic Society, having become obsessed with the particular and painstaking process required to make great chocolate. Sirene looks at many factors when considering a new cocoa farmer, and considers its relationship with suppliers as one of equals, working together to deliver the best chocolate possible.

    The beans

    One of the huge benefits of working directly with farms growing cacao is the availability of working with unusual and rare species or varieties. Cacao trees have many cousins, both in the same species as well as in different ones. We are used to thinking of chocolate as brown or black, but Pataxte beans are pure white. They also have an especially floral flavour to them, which when combined with cacao – as we Sirene did in this Caramelized Pataxte bar – can be quite a striking and interesting contrast.
