This is a serious take on caramelised white chocolate. Chocolarder’s ‘blonde’ bar has impactful flavours of biscuit, shortbread and caramel, sweetened further by the ethical sourcing of the cocoa butter from a cooperative in Ghana which is challenging the status-quo in the region.

Once described as “posh Caramac” by an attendee at one of our virtual tastings, this bar, made in Uganda, with Ugandan cocoa, is a proper upgrade from Nestlé’s mass-produced concoction. The rich cocoa butter on offer in this bar from Latitude is one to savour.

Sirene - Caramelised white

The technical precision employed by Sirene Chocolate in Canada is certainly evident in this bar. Starting with ‘just’ a ‘normal’ white chocolate, they elevate the richness of flavours by roasting the finished bars to exactly the specifications to optimally caramelise the sugars. The result is a bar which evokes dulce-de-leche.

Fruition - Toasted white 38%

If you’re pursuing some familiar flavour notes, then vanilla might be welcome ingredient. Fruition here have crafted a white chocolate, warm in colour and flavour from toasting, with a dash of vanilla and pinch of salt to bring it to extraordinary heights of flavour.
