This is an extremely creamy bar from Chocolarder that makes it difficult to believe that it’s 80% cocoa! This bar is rich and smooth, with some slightly smoked bran and floral notes. We detect hints of molasses, candied plum, and leather on the finish.

About the maker

Chocolarder crafts its chocolate in Falmouth, Cornwall. Chocolarder’s exciting line of fine single-origin bars and delightfully innovative locally-inspired inclusions use only top quality ingredients that succeed in doing better for the environment and the communities at their source. The whole company has at its heart an ethos of “ethical transparency”. Mike Longman – founder and chocolate maker – is unwavering in his commitment to a truly transparent and sustainable production process, even to the point of transporting his beans to Falmouth by sailboat.

The beans

The beans for this bar come from Doi Pui in Chiang Mai, and is the first of Chocolarder’s bars to be from Thailand. These beans are representative of the beginning of Thai cocoa. It was created over 30 years by Professor Sanh La-ongrsi, who combined criollo and amelonado cocoa varieties together and this extremely sought out cacao finally arrived to the European market.
