TASTING NOTES
This Dutch chocolate, made from Colombian Criollo beans, enjoys subtle hints of cherry, raisin and prune. These flavours are accentuated by a light roast of the beans, which brings out the very best of this female-grown Colombian cocoa.
ABOUT THE MAKER
Dutch founders Rodney and Enver began to create bean-to-bar chocolate in Amsterdam in 2011. They are as passionate about ethics and sustainability as they are about the chocolate itself; they use only Organic ingredients, pay 50% above the Fairtrade price, and aim to become carbon neutral in their chocolate production. One aspect of this comes from their factory in Amsterdam’s harbour, which has such a large solar panel-covered roof that they generate more power than they consume.
THE BEANS
The beans in this bar come from Cooagronevada, a cooperative of female cocoa and coffee growers in the Sierra Nevada de Santa Marta nature reserve. The cooperative is motivated not by profit, but by improving the welfare of its farmers and creating a positive ecological impact. That philosophy persists in the beans’ delivery, as Chocolate Makers transports the beans across the Atlantic in the beautiful old-style Tres Hombres sailing ship.
