About the bar

This 70% dark bar from Chocolate Tree is made from the rare Chuncho bean. The bar is cooling with a lovely length, and we tasted lots of bright, citrusy acidity towards the end.

About the maker

Founders of Chocolate Tree, Alastair and Friederike Gower, started their chocolate adventure in 2005 by touring music festivals and selling their organic chocolates from a hand built solar powered geodesic dome tent. However, working with organic and fairtrade couvertures wasn’t enough for them. Alastair and Friederike – being the adventurous types – decided to start making their own chocolate from bean to bar in 2011 and source cacao directly from South America. Chocolate Tree were early pioneers of the UK craft chocolate movement and have continued to impress with a wide range of innovative and exceptional products, ranging from bars to bonbons and more!

The beans

The cacao used, Chuncho, is an ancient varietal native to this unique region of Peru. Known for its exceptionally small beans, Chuncho requires only a brief fermentation period of about three days, carried out in wooden boxes before the cacao is sun-dried. Despite their size, these beans are packed with flavour, offering a naturally mild yet complex taste profile that sets them apart.
