The Chocolate Tree Peru Chililique dark bar uses cacao from a very particular area of Peru. Compare the flavour to that of Chocolate Tree’s Peru Maranon in order to see how much bean flavour can vary within a single country.
Chocolate Tree has worked with CacaoTales to source the beans for this bar. Earlier this year Ali from Chocolate Tree actually went to visit the farmers in Chililique himself. The cacao grows in the hills around the village of Chililique. Because most of the farms are fairly small, Cacaotales takes care of fermentation and drying centrally. This means farmers have more time to spend cultivating the trees. It also makes it easier to guarantee consistency in the post-harvest practices.
We noted a nice, well-balanced acidity in this dark chocolate bar, creating harmony between the sweeter and more acid notes. The bar has an almost juicy quality, like tart berries bursting in your mouth. Finally discover some pleasant tannins at the end.
