Goodnow Farms – Yasica Especial, Dark 70%

We have had the pleasure of getting some incredibly rare bars from Goodnow Farms. This limited release Yasica Special is a 70% dark Nicaraguan bar, crafted using an ancient, rare variety of Criollo beans.

About the maker

Tom and Monica were living in Los Angeles as a TV producer and real estate agent when they discovered the magic of craft chocolate. In their own words: “We first discovered craft chocolate in, of all places, a vintage furniture shop in Los Angeles.  The incredible flavours we tasted in those bars completely changed how we thought about chocolate, and started us on our journey to become single origin chocolate makers”.

The beans

Over a decade ago, farmer Giff Laube discovered what he believed to be ancient wild Criollo trees deep in a remote jungle near Nicaragua’s Yasica River, and subsequent genetic testing by the USDA confirmed that one tree, designated “Laube 1,” was 100% pure, ancient Nicaraguan Criollo. To preserve this rare genetic material, Laube cleared an isolated part of his farm and spent ten years carefully propagating the tree through grafting, culminating in a first harvest that yielded a single 50-kilogram sack of dried cacao beans. These beans, characteristic of pure ancestral Criollo, are completely white rather than the typical purple, resulting in a finished dark chocolate with an unusually light, golden-brown hue. Exceptionally small in size and limited, these bars are extremely rare!
