This 80% dark chocolate from Junglegold Bali is made with locally farmed coconut blossom sugar. We picked up on tasting notes of buttery bananas and smoky oak.

About the maker

Tobias Garritt and Michael Robison, the co-founders of Junglegold Bali, initially worked on conservation and sustainable development projects in Indonesia before delving into chocolate. Their passion for preserving the environment and supporting local communities led them to explore the potential of cacao farming as a way to achieve these goals. In 2010, they started making chocolate, first under Pod Chocolate and now as Junglegold Bali, to create a market for high-quality cacao, support local farmers, and promote sustainable practices.

The beans

Junglegold Bali work directly with local farmers in Indonesia to source their cacao beans. Their close proximity to the farms allows them to ensure the highest quality and support farmers with a price premium. This direct relationship enables them to oversee the entire process from bean to bar, ensuring the best possible product. The beans are farmed by Bali Cacao farmers, who have been growing cacao for six years, and their mission is to increase the yield of cacao cultivation and ensure sustainable agriculture.

The fermentation process includes five days of fermentation with two sessions of reversing the beans every two days. The farmers use fermented boxes made of local wood to cover the box after the cacao beans fills with banana leaf and the beans dry in solar dryer for four to five days depending on the climate situation.
