About the bar

This 70% dark bar from Manoa is very light, with alcoholic notes reminiscent of whisky and rum. Initially, the bar is intensely fruity, led by dried mango, pineapple, and bright passionfruit, and a subtle bubblegum-like sweetness on the finish.

About the maker

Manoa was founded by Dylan Butterbaugh and Daniel O’Doherty. The pair use a variety of different locally sourced ingredients in their bars, which they craft in Kailua on Oahu island. All of Manoa’s bars are sourced from local farmers in Hamakua, Waiahole, Maunawili and Haiku. Hawaii is the only American state where cacao is grown.

The beans

The beans for this bar come from the Honoli’i Orchards, a multi-generational family farm situated on the slopes of Hawai’i Island’s tallest volcano, Mauna Kea. The area is known for abundant rainfall, deep volcanic soil, and a dynamic terrain that is shaped by the Honoli’i Stream. Manoa has been collaborating with the farm manger, Colin Hart, since 2019, in establishing both a thriving farm and centre for cacao research and education within Hawai’i.
