Manufaktura Czekolady are Poland’s first (and to date only) single origin, artisan chocolate maker. Through their range of single origin bars, founders Christopher Stypułkowski and Thomas Sienkiewicz tell a chocolate story about the flavours of different regions and about how chocolate is made. Their bars are produced by hand in Poland, in a traditional way you might have seen 150 years ago.

It’s fair to say that xylitol is perhaps not the first ingredient that springs to mind when you’re considering  a list of typical chocolate inclusions.  This sugar alcohol is more frequently found in toothpaste, as it has actually been found to reduce cavities in teeth by up to a third, and to help in remineralisation.  That’s all well and good, but what about the taste?  Well, this is a decidedly earthy bar in which green, almost muddy notes shine through.  It’s rough texture means that it takes a little while for the layers of green, grassy flavour to reveal themselves.  The final finish is most unusual.  It has the tangy, almost cooling or menthol sensation of fresh orange rind.  A most unusual bar.
