About the bar

NearyNógs in Northern Ireland created this bar as part of their ‘Irish Collection’, ‘a series of bars inspired out of a love of local traditions and timeless classics.’ The 70% Dominican chocolate is combined with burnt sugar, orange bitters and Irish whisky to make an ‘Old fashioned Irish’. It was an award-winner at the 2023 Eurobean craft chocolate festival, and rightly so.

About the maker

NearyNógs was founded in 2011 by the husband-and-wife team of Shane and Dorothy Neary. Situated in County Down at the base of the Mourne Mountains and overlooking the Irish Sea, NearyNógs is dedicated to bringing you delicious, ethically sourced chocolate flavoured with the finest local ingredients.

The beans

The beans in this bar are Heirloom Designated Arriba Nacional beans, grown on Samuel Von Rutte’s Hacienda Limon estate in the Guayas Basin, Ecuador. Unusually, Samuel pre-dries the cocoa seeds before fermentation, which reduces both acidity and bitterness and contributes to their rich and nutty caramel profile.
