Parliament Chocolate’s Ice Cream milk bar certainly has a unique story behind it; Parliament originally started out as an ice cream shop, and they started making chocolate to put in their ice cream. To make this bar, Ryan and Cassi freeze dry their ice cream and combine it with their Zorzal dark chocolate.

Smooth and deliciously creamy, this bar has tasting notes of puff pastry, roasted malt, and yeast.

About the maker

Parliament Chocolate was founded in 2022 by husband-and-wife duo Ryan and Cassi Berk. Based in Redlands, California, Parliament Chocolate is a small company with a focus to know where every single ingredient they use comes from. Ryan and Cassi were drawn to craft chocolate as it felt far more personal than mass produced chocolate – the pair strive to build friendships with the people that they source their ingredients with, and make sure that each and every component is held with respect. Ryan and Cassi source their cocoa beans directly from the farmers and their families and pay them above market value for their hard work. According to Parliament, the moral of the story is that good social, agricultural, and economic values = amazing chocolate!

The beans

The Zorzal cacao beans are farmed and processed by Reserva Zorzal and their neighbouring farms. Reserva Zorzal is in fact a large bird sanctuary – protecting the wildlife habitat for the Bicknell’s Thrush – in the Duarte province of the Dominican Republic. Its mission is to work to reforest endangered lands, protecting the birds as well as cultivating cacao and macadamia nuts. Burrowed within the bird sanctuary is Zorzal Cacao, a 130-acre fermentary and organic cocoa farm.
