About Parliament

Founded in 2013, Parliament Chocolate is owned by husband-and-wife duo Ryan and Cassi Berk. Their mission? To make delicious chocolate bars with some of the world’s most ethically sourced cacao. The name ‘Parliament Chocolate’ was inspired by the building where they make their bars in California, which used to house ‘The White Owl Cafe’ back in the 50’s – as a Parliament is a group of owls, their name is a tip of the hat to the history of the building.

Alongside their bars tasting delicious, their packaging is something that also really stood out to us. Designed by Ryan and Cassi’s good friend, James McClung, the packaging is hand-drawn or painted before being digitised for production.

How they became makers…

Ryan Berk started out as a chef who opened his very own ice-cream shop – eventually, Ryan started making his very own chocolate to put in his ice cream, and the rest was history. As a small company, Parliament feel that they can produce chocolate with amazing quality when love and focus is put into processing the beans – Parliament’s main focus is to know where each and every ingredient comes from, and to treat those ingredients with respect.

Parliament’s Sourcing

All of the cocoa beans that Parliament source are transparently and ethically traded. Ryan travels to the bean origins to source the beans directly, working closely with Uncommon Cocoa, Meridian Cocoa, and Thai Cacao Distribution. Interestingly, Ryan actually founded Thai Cacao Distribution in 2016, after his experience as a chef led him to want to ethically source cacao from Thailand. Ever since, Ryan and his team have developed the largest cacao export operation in the country.
