About Ivee Promenade

The founder of Ivee Promenade, Katsiaryna Dembouskaya, has a professional background in pastry and confectionery. She studied at the prestigious École Nationale Supérieure de Pâtisserie (ENSP) in France (part of the Alain Ducasse group) where she mastered the art of fine pastry, chocolate work, and flavour design. After her studies, she continued to train and work in France and Austria, gaining experience in high-end patisserie and learning from chefs who view dessert-making as both craftsmanship and emotional expression.

Katsiaryna comes from a background where creativity, sensory experience, and the art of slow living have always been essential. For her, chocolate became a natural medium that unites taste, touch, and emotion.

Ivee Promenade’s core operational team consists of Katsiaryna and her husband Vadzim, who together oversee every aspect of the business — from bean sourcing and production to creative direction, strategy, and brand development. Each bar of Ivee Promenade chocolate is made in their workshop in Gdańsk, where every stage of production, from roasting to wrapping, is done by hand. Their mission is to create chocolate with soul, merging traditional craftsmanship with innovation.

How they became makers…

Ivee Promenade was founded in July 2022 in Gdańsk, Poland, as a family venture uniting two generations. The company was established by Katsiaryna Dembouskaya, her husband Vadzim Dembouski, and her parents. Together, the formed a team of four founders who share the same values of craftsmanship, integrity, and creative excellence.

Katsiaryna’s path into chocolate began with a fascination for fermentation, which she views as the living alchemy of cacao. She saw how time, temperature, and care could transform a simple bean into something sacred, alive, and multidimensional. This passion and vision ultimately led to the creation of Ivee Promenade, a brand where artistry meets precision and chocolate becomes a form of sensory awakening.

The name “Ivee” stands for each of the founding members of their team, symbolising unity, creativity, and dedication, while “Promenade” symbolises the idea that life — and taste — are meant to be savoured slowly. Together, Ivee Promenade represents a leisurely walk through the art of fine chocolate, where each bar invites you to pause, feel, and indulge.

Ivee Promenade’s Sourcing

Ivee Promenade’s cacao comes from smallholder farms and cooperatives across several regions, including Madagascar, Uganda, Congo, Ecuador, Peru, and Vietnam. Many of these producers have cultivated cacao for generations, preserving local varieties and post-harvest traditions. These beans are sourced primarily through Silva Cacao and Crafting Markets, both of whom maintain full traceability and work directly with farmer communities to support ethical and sustainable practices.
