Meet the maker

About Herufek
Jitka and Michal Herufek started making their own chocolate when they purchased their first bag of cocoa beans back in 2014, armed only with limited chocolate-making knowledge from YouTube and internet pages. Immediately realising that the beans were not quite up to their standards, Jitka and Michal were lucky enough to meet some craft chocolate makers including Patrick Walter from Choco Del Sol, and Josef Zotter from Zotter chocolate. The pair got some advice about the beans they were purchasing, and ever since, the sky has been the limit. Today, Jita and Michal have 4 employees who work at their factory in South Moravia, in the Czech Republic, and last year processed approximately 6 tonnes of cocoa.

How they became makers…
Herufek Chocolate was founded in 2015 by Jitka and Michal Herufek, after Jitka started experimenting with making chocolate truffles after graduating with an Economics degree. At the time, the pair were using conventional couvertures to make chocolate bonbons as a hobby and part-time job, but this soon expanded into making their own chocolate using cocoa beans in 2014. After making several bad batches of chocolate from awful beans (despite the beans being organic certified), Jitka and Michal were lucky enough to meet some seasoned makers, like Patrick Walter from Choco Del Sol, and Josef Zotter himself. They were able to buy some great beans from them, and the rest is history – today, Herufek has 6 employees including Jitka and Michal, and make their wonderful bars in South Moravia, Czech Republic.
Herufek’s Sourcing
Currently, Jitka and Michal source their beans from Uncommon Cacao, Crafting Markets, and Original Beans, who are able to ensure that the beans they supply are ethically sourced and transparently traded. The pair also have been to visit the farmers at origin.
