PRIDI Cacaofevier wasn’t born out of a desire for luxury chocolate; it began as a sustainability mission. “Pridi” in Thai translates to “happiness,” a sentiment perfectly aligned with the joy Pridi’s chocolate brings. After all, what could be a more fitting name for something that aims to bring a smile to people’s faces? Additionally, the very first Pridi Cacao test facility, and Pridi’s current factory for that matter, resides in an area of Bangkok called Pridi Banomyong.

Most of Pridi Cacaofevier’s chocolates only use two-ingredients, with occasional additions like traceable coconut milk powder or locally sourced nuts. This meticulous sourcing allows them to not only guarantee the quality and naturalness of their ingredients, but also to build strong connections with the farmers and communities involved in their production.

How they became makers…

Daniel Bucher, Pridi’s founder, never envisioned himself becoming a chocolate maker. As a chef by training, Daniel’s interest sprouted from a culinary challenge – he was sourcing ingredients for a high-end hotel and wanted to feature locally-made chocolate. Thailand shares the

same latitude as many renowned cocoa-growing nations like Vietnam, the Philippines, and Indonesia; and yet, Daniel couldn’t find Thai chocolate that met the quality standards of a five-star hotel or fine-dining establishment. With the unexpected downtime brought on by lockdown, Daniel embarked on a quest to understand the story behind this absence – was it a flavour limitation, a supply chain issue, or something else entirely? This curiosity led him down a path of exploration, ultimately pushing him to try to make his very own chocolate. Little did Daniel know, this initial exploration would soon blossom into PRIDI Cacaofevier, a testament to the potential of Thai chocolate.

PRIDI Cacaofevier’s Sourcing

Pridi Cacaofevier prioritizes direct trade, and building long-term relationships with farmers. In some cases, Daniel directly participated in planting trees and setting up fermentation systems alongside the farmers. This deep connection extends to new farmers – Pridi actively educate and support them, fostering a growing Thai cocoa community.

But Pridi’s vision extends beyond their immediate circle – they believe in the potential of Thailand as a chocolate powerhouse. Partnering with other Thai chocolate makers, growers and fermenters, Pridi are in the process of establishing the Thai Chocolate and Cacao Association. Together, they aim to elevate the craft chocolate scene in the region, putting Thai chocolate on the global map. This collaborative spirit is extremely exciting – Pridi are not just building a business, but cultivating a movement.
