Mellow
About Mellow Chocolate
Established in 2019, Mellow Chocolate was born in one of Copenhagen’s old attics. The founder, Jacob, began to experiment with cocoa beans in his small wooden attic storage space in 2019, getting power from a 30 metre cord line. Since then, Mellow has come a long way – now armed with a team of 7 people, they develop their bars from a scientific view, with the intention of maintaining the high amount of antioxidants, minerals and vitamins in the hand-picked cacao beans. By genetically screening their cocoa beans, Mellow have developed chocolate with 3x the amount of antioxidants compared to the closest commercial bar available.
Mellow’s packaging is just as impressive as their delicious chocolate – all of their bars come wrapped in hand-made Lokta papers from Nepal, made by a female collective in the Himalayas from the thick bark of the Lotka trees. This means the trees aren’t cut down in the paper-making process, and the paper is coloured with natural spices and roots.
How they became makers…
Jacob, a former chemical engineer working in the food tech industry, went to visit his brother’s small coffee roastery in Panama. While there, the two brothers visited some coffee farmers in the north-east region, where one of the farmers had a small cocoa plantation and a small bean-to-bar workshop. Feeling inspired, Jacob returned home from his trip with a suitcase full of cacao beans. Armed with only a coffee roaster, he began to experiment with roasting in his attic , and Mellow Chocolate was born.
Mellow Chocolate’s Sourcing
Mellow Chocolate source their beans with cocoa forestry, fair pay for the farmers, and biodiversity at the forefront of their mind. They directly trade with a social cooperative which provide them beans from their two most used origins.
