This delightful 55% milk bar from Canadian chocolate maker SOMA is a fantastic example of high-cocoa milk chocolate, giving the great taste experience of craft chocolate and the moreish sweetness of milk chocolate. In this case, a smooth melt brings out sweet notes of malted caramel. Compare it with SOMA’s Creole Gardens 70% Dark, made with the same beans but producing fruity-sweet, floral hints.
ABOUT THE MAKER
SOMA Chocolatemaker was founded in 2003 by Cynthia Leung and David Castellan. From modest beginnings working out of a tiny corner of a former whisky distillery, Cynthia and David’s clear-minded focus and commitment to working only with the finest beans has earned SOMA a formidable reputation among craft chocolate lovers. SOMA now has a number of outlets across Toronto, and if you’re ever visiting the city we highly recommend a visit to one of their shops. You can enjoy a warming drinking chocolate in winter or a creamy ice cream in summer, and you can also buy SOMA’s filled chocolates, which are only available locally but are talked about around the world for their creative combinations of ingredients and quirky takes on current food trends.
THE BEANS
The cocoa for this bar was sourced from Produits des Iles SA (PISA), a central fermentery established in northern Haiti in 2012. PISA works with 1,104 small-scale farmers – 492 of whom are women – to pay premium prices for the unprocessed cocoa harvest and then processing it centrally, allowing farmers to earn more money for their quality beans.

I loved this chocolate. So much so that I ate the whole bar in a day! A really creamy chocolate that feels smooth and thick as it melts in your mouth. Love the artwork of Soma bars too.

Beautiful smoot texture, sweetness of milk with a hint of smokiness. Strongly characteristic of darkmilk. A perfect chocolate.
