Inspired by Brion Gysin’s kinetic sculpture named the Dream Machine, this 37% dark milk bar from Soma mimics the euphoric feeling of being in dreamland. Enjoy milky tasting notes of caramel, butter, and brown sugar.

About the maker

Based in Toronto, Canada, Soma started making chocolate from the bean in 2003. Cynthia and David originally set up their tiny factory in the corner of a disused whisky distillery. Combining David’s skills as a pastry chef with Cynthia’s technical expertise as an architect they immersed themselves in the world of craft chocolate, creating something of a mini chocolate empire in Toronto. Soma has now got two cafes and shops where they sell their chocolate bars, as well as baking cookies, making hot chocolates, and producing a line of truffles and even making its own gelato!

The beans

The beans for this bar are from Hacienda Victoria, a 500-hectare cocoa plantation about half an hour from Guayaquil, Ecuador. Established in 2012 by Carlos Eduardo García Fuentes and named after his wife, Victoria, the estate is leading the way in sustainable, socially responsible cocoa agriculture.
