This bar from Storm & Bille has delicate notes of tropical fruit, characterised by mango, which we think works perfectly with the raisin and citrus flavours we picked up.

About the maker

Storm and Bille, founded in 2017, is a Swedish-based bean-to-bar chocolate maker with a focus on the local and national Swedish market, and only a handful of distributers abroad. Their mission? To produce delicious two-ingredient single origin chocolate products which anyone can eat – all of their chocolate is free from allergens, vegan, and organic. Their chocolate factory (translated to Chokladfabrik in Swedish) is located in the heart of Linné, a food district in the city center of Gothenburg, Sweden. The factory is pretty compact at 45 square metres, and Kristin & Johan employ 1.5 employees per year. It also has a storefront area where customers can buy chocolate & take part in tastings… so if you’re ever visiting Gothenburg in Sweden, make sure you pop in!

The beans

The village of San Juan Chivite in Guatemala is located on a 180-hectare farm in the Alta Verapaz region. The farm was abandoned by its former owner during the civil war in the 1980s and in 1985 was handed over to the 65 families who previously worked on the farm. Slowly but surely, the families have switched production from coffee to cocoa, and 125 families make a living from these plantations which now consist of 90% cocoa. To sell their beans, the farmers carry the 60kg sacks from the village across the wild Cahabon River via a suspension bridge.
