About the bar
This curious little number from Zotter contains no sugar at all. Imagine a 70% dark chocolate with all the sugar replaced with milk powder. What you end up with is a chocolate that has all the intensity of a dark chocolate and the creaminess of a milk chocolate, but none of the sweetness of either. This bar embraces intense cocoa and Tyrolean milk. It exudes an aroma of nougat waffle, milk and cream notes, and a touch of fruitiness, finishing with a hint of fruit and milky aftertaste.
With no sweeteners at all, this is a chocolate that may not be to everyone’s taste, but for the intrepid and curious, it’s a must try!
About the maker
Josef Zotter is one of the long-established heroes of the craft chocolate movement. He has been producing chocolate since 1992, became famous for his wacky flavour combinations (scarlet runner bean and coriander pastry, anyone?), and was one of the earliest to produce 100% Organic and Fairtrade products. He has worked tirelessly to improve the lives of his growers around the world, engaging in numerous initiatives in Latin America, Africa, and Southeast Asia. He also runs an outstanding chocolate factory visitor experience – The Zotter Experience – that is a must-see for any chocolate-loving visitors to Austria.

Although there is a nice strong taste of Cocoa, I found the texture and melt to be very cloying (happily a word that is on the Tasting Wave) and somewhat earthy, presumably due to the replacement of sugar with milk. I’m afraid this bar is definitely not for me.

Really enjoy this bar now- it tastes a bit nutty and creamy. No weird taste like I initially experienced. Repurchased 3 times!

Melt: creamy, mouth-coating
Flavour: upfront is chocolatey with a distinct and unusual flavour; it feels like I’m tasting a non-food item, like an unscented skincare product, but in a pleasant way. It becomes increasing yogurty-tangy which culminates in a burst of fruit. Aftertaste is long, chocolatey and yogurty-tangy.
It’s like mixing cocoa powder into unsweetened Fage or skyr.
It’s quite remarkable- it almost makes you pucker but doesn’t surpass the threshold, so you’re left teetering on the edge. At first, I found it too creamy but it grew on me over time, to the extent that I would consider a repurchase.

With the absence of sugar you truly get to appreciate the genius combination of milk and chocolate without having to deal with the unnecessary, almost repulsive cloying sweetness that many commercial chocolates have.
Despite its high cocoa content, the cocoa doesn’t overpower the milk but still delivers a deep, roast flavour with sweet, creamy caramel notes from the milk. It’s a must try.

I heard this mentioned on Sunday Brunch (first time) and as I have congenital sucrase-isomaltase deficiency (CSID) this means I can get my chocolate fix without any of the nasty side effects from the sugar. Love the taste and the subtle milky sweetness. Perfect.

Being a massive fan of creamy sweet milk chocolate i really didn’t know how we’d get on but it was worth the chance. 70% is really enough when you consider the absence of sugar. I hadn’t noticed just how sweet milk can be until trying this bar. It’s just there curbing the sharp edge of the cocoa and making a wonderfully soft mouth feel. It smells like a milk chocolate and quite deceiving to the actual taste. Be brave give it a shot, you’ll be surprised.
