The flavour profile of this 70% Peruvian dark chocolate is predominantly jam-like, with strawberries, raspberries, and blackcurrants all making an appearance. It has a slightly roasted edge, with a fudgy texture and melt. A spectacular bar.
ABOUT THE MAKER
Ara Chocolat is a Parisian bean-to-bar chocolate maker founded by Venezuelan couple, Andrés and Sabrina. Andrés, the head maker, worked at multiple Michelin-starred restaurants and 5-star hotels in London before turning his skills to the art of chocolate making. They now run their business with sustainability in mind – using biodegradable packaging, renewable energy, trading directly with farmers, making products 100% vegan. It’s all at the heart of what they do.
The beans in this bar were grown in the area surrounding Tingo Maria, a city in central Peru that lies on the Huallaga River between the Andean highlands and the Amazonian jungle.
